The salmorejos style sauce is my go-to fresh summer sauce, perfect to enjoy it with jamón, anchovies or smashed avocado. So easy to make and you can store it is the fridge and enjoy it for an entire week.

Directions

  • Spread salmorejo style sauce on a toast.
  • Add and spread 1/4 smashed avocado on each slice. Add a bit of salt and pepper.
  • Place 1 poached egg over the avocado. Add salt and pepper.
  • Serve and enjoy!
