Cookie dough ice cream, healthy and 100% vegan.
Made with chickpeas, yes, but do not be sceptical. It is seriously good, I am sure if you try it without knowing it is made with chickpeas you will never guess. That is actually how I did it at home 😉 as it can be tricky to sell this recipe to a Ben and Jerry´s lover. But it worked!
I have to say that I love legumes for stews, salad… but for dessert… it is tricky. I tried a couple of baking recipes with red kidney beans and were quite ok… but not great, I could taste the flavour on the beans.
So trust me, this healthy cookie dough is delicious! I could just eat it with a spoon, but I already have few recipes in mind to use this dough 🙂 I will keep you posted.
I do not like sweet dessert but you can add more dates if you want it sweeter 🙂
You can just eat the cookie dough sandwiches straight away or put them in the freezer and freeze for at least 3 hours. I love it as ice-cream!
Seriously, you need to try this recipe at home or even more fun, cook it for someone that will never taste it if they knew it is made with chickpeas 😉 I am sharing a couple sandwiches with friends tonight, can not wait to see their reactions when I tell them the ingredients 🙂

50 g Whole- wheat flour
50 g Dates
¼ teaspoon Cinnamon
30 g Cashew nut butter
½ teaspoon Vanilla
1 teaspoon Cacao
¼ teaspoon Salt
1 teaspoon Oat milk
- COOKIE DOUGH
120 g Chickpeas
50 g Dates
1 tablespoon Oat milk or yogurt
1 tablespoon Cacao
40 g Cashew nut butter
1/2 teaspoon Cinnamon
1 teaspoon Vanilla
½ teaspoon Salt
½ teaspoon Baking soda
50 g Chocolate chips (85% pure)
- Deep freeze it for at least 3 hours if you want to eat it as ice-cream.
