If you are looking for a fresh and different lunch idea, Salmon Tacos with Mango is a great lunch recipe.
Last week I got a little bit of homemade smoked salmon from a friend of mine. Homemade with fresh salmon she got at my favourite fish store in The Hague. After trying some classic toast with cream cheese I wanted to make something different.
I thought it would be a nice idea to make some mini tacos for lunch with some mango, avocado, tomato, cottage cheese and lime. Sometimes you mix some simple ingredients and you get a delicious result.
They are easy to make, fresh and are ready to go in less than 20 minutes.
Enjoy this quick recipe for the last summer days.
