My favourite toast for late breakfast any weekend or as lunch during the week.

Cold tomato sauce `salmorejo style´ super easy to make, a good avocado and a perfect poached egg… yummy!

`Salmorejo´sauce and How to make perfect poached egg are linked above.

Ingredients

  • 4 bread slices

  • `Salmorejo´style sauce

  • 1 avocado, smashed

  • 4 poached eggs

  • Salt

  • Black pepper

Directions

  • Spread salmorejo style sauce on a toast.
  • Add and spread 1/4 smashed avocado on each slice. Add a bit of salt and pepper.
  • Place 1 poached egg over the avocado. Add salt and pepper.
  • Serve and enjoy!
