Savoury, creamy and sweet appetizer idea for summer that is easy to make. We are going to make some whipped feta with herbs and honey and top it with pan-charred tomatoes, peach or nectarine with balsamic vinegar.
Served a little warm to enjoy it as a dip with some nice pita wedges.

Whipped feta with charred tomatoes

200 g feta cheese (1 block)
1 teaspoon honey
1/2 teaspoon oregano
1/2 teaspoon thyme
70 ml water
1/2 teaspoon garlic powder
1 tablespoon olive oil
Salt and pepper
- Pan-charred tomatoes
10-12 cherry tomatoes (red and yellow)
1 peach or nectarine, diced
1 teaspoon of olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
1/2 teaspoon thyme
Salt and pepper
Directions
- Break up the block of feta and place in a food processor.
- Add the rest of the ingredients: honey, oregano, thyme, water, garlic, olive oil, salt and pepper. Process until smooth and creamy. Refrigerate until the tomatoes are ready.
- Heat 1 teaspoon of olive oil in a small pan, high heat.
- Add the tomatoes and cook for 3 minutes over medium/high heat.
- Add diced peach and cook for 1 minute.
- Stir in balsamic vinegar, honey, thyme, salt and pepper, cook for 2 minutes.
- Place the whipped feta in a platter and top with pan-charred tomatoes and juices.
- Serve with some toasted bread or pita wedges.
