Creamy and a little bit sweet whipped feta with pan-charred tomatoes and peach with balsamic vinegar, so simply yet so good. The perfect starter or appetizer for any summer bbq.

Savoury, creamy and sweet appetizer idea for summer that is easy to make. We are going to make some whipped feta with herbs and honey and top it with pan-charred tomatoes, peach or nectarine with balsamic vinegar.

Served a little warm to enjoy it as a dip with some nice pita wedges.

Ingredients

  • 200 g feta cheese (1 block)

  • 1 teaspoon honey

  • 1/2 teaspoon oregano

  • 1/2 teaspoon thyme

  • 70 ml water

  • 1/2 teaspoon garlic powder

  • 1 tablespoon olive oil

  • Salt and pepper

  • Pan-charred tomatoes
  • 10-12 cherry tomatoes (red and yellow)

  • 1 peach or nectarine, diced

  • 1 teaspoon of olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon honey

  • 1/2 teaspoon thyme

  • Salt and pepper

Directions

  • Break up the block of feta and place in a food processor.
  • Add the rest of the ingredients: honey, oregano, thyme, water, garlic, olive oil, salt and pepper. Process until smooth and creamy. Refrigerate until the tomatoes are ready.
  • Heat 1 teaspoon of olive oil in a small pan, high heat.
  • Add the tomatoes and cook for 3 minutes over medium/high heat.
  • Add diced peach and cook for 1 minute.
  • Stir in balsamic vinegar, honey, thyme, salt and pepper, cook for 2 minutes.
  • Place the whipped feta in a platter and top with pan-charred tomatoes and juices.
  • Serve with some toasted bread or pita wedges.
