It is a refreshing idea for lunch or dinner. Add your favourite summer fruit, fresh mozzarella, fresh basil or oregano and enjoy it!

Ingredients

  • 10 halved cherry tomatoes

  • 10 halved pitted cherries

  • 1 slice of papaya, chopped into cubes

  • 6 mini mozzarellas

  • Fresh basil or oregano

  • 1/4 red onion, thinly sliced

  • Olive oil

  • Salt and pepper

Directions

  • On a medium size platter, arrange the tomatoes, cherries, papaya and onion.
  • Add mini mozzarellas cut in halves.
  • Drizzle with olive oil and season with salt and pepper.
  • Top with the basil or oregano leaves and enjoy it!

Papayas are not that difficult to find in Europe. There are multiple farmers growing organic papayas in the south of Spain and you can buy them directly from the farms thanks to Crowdfarming.
