Anchovies are still in season so it is the best time to make this delicious recipe. You can also use sardines or red mullet fillets, all options are delicious with this summer dressing.

Grilled anchovies with fresh summer dressing

500 g fresh anchovies, cleaned and cut in half
- Fresh summer dressing
1 large tomato
1 garlic clove
1 tablespoon chopped fresh parsley
1/2 teaspoon fresh thyme
1 lime juice
1/2 lemon juice
2 tablespoon olive oil
salt
pepper
Directions
- In a large skillet or grill pan heat 1/4 teaspoon olive oil.
- Working in batches lay flat the anchovies in the skillet, skin side up first. Cook for 1 minute on each side and transfer to a platter.
- Fresh summer dressing
- Cut the tomato into small cubes and place it in a bowl.
- Finely chop or grate the garlic and place it in the bowl with the tomato.
- Add the parsley, thyme, lemon and lime juice, olive oil, salt and pepper. Mix well.
- Pour it over the grilled anchovies and serve with lime slices. Enjoy!
