250 g green beans, trimmed and cut into 2-3 cm pieces
1 fresh tomato, diced
3 piquillo peppers, sliced
1 hard-boiled egg, chopped
¼ onion, sliced
2 tablespoon olive oil
½ teaspoon Dijon mustard
1 teaspoon vinegar
¼ yellow bell pepper, chopped
- Cook the green beans in a large pot with boiling water and salt for about 10 minutes.
- Drain and set aside.
- Dressing: Whisk together the olive oil, mustard, vinegar, salt, pepper and yellow bell pepper. Set aside.
- Place the green beans on a platter. Add the diced tomato, sliced piquillo peppers, chopped egg, sliced onion and tuna. Sprinkle some pine nuts.
- Whisk the dressing and pour over the salad. Serve and enjoy!
