  • 250 g green beans, trimmed and cut into 2-3 cm pieces

  • 1 fresh tomato, diced

  • 3 piquillo peppers, sliced

  • 1 hard-boiled egg, chopped

  • Tuna

  • ¼ onion, sliced

  • Pine nuts

  • Dressing:
  • 2 tablespoon olive oil

  • ½ teaspoon Dijon mustard

  • 1 teaspoon vinegar

  • Salt

  • Pepper

  • ¼ yellow bell pepper, chopped


  • Cook the green beans in a large pot with boiling water and salt for about 10 minutes.
  • Drain and set aside.
  • Dressing: Whisk together the olive oil, mustard, vinegar, salt, pepper and yellow bell pepper. Set aside.
  • Place the green beans on a platter. Add the diced tomato, sliced piquillo peppers, chopped egg, sliced onion and tuna. Sprinkle some pine nuts.
  • Whisk the dressing and pour over the salad. Serve and enjoy!
