2 medium size eggs
1 tablespoon vinegar

- Bring a medium-size pot of water to a boil, then reduce the heat to low. Water needs to be hot but never boiling.
- Crack an egg into a small strainer over a bowl. This will remove the liquid or watery part of the egg and avoid the white wispies on the water while cooking the egg.
- Transfer the egg into a small bowl and repeat the process with the other egg or eggs.
- Stir the vinegar into the water and create a vortex with a spoon. Add eggs one by one bit quickly into the middle of the vortex.
- Cook for 4 minutes.
- Transfer eggs with a slotted spoon into an ice water for 5 seconds and then into paper towel to remove any excess water.
- Serve them on top of your favourite toast.
