Pasta with goat cheese and sun-dried tomato, a simple and delicious combination.

I have to say that I am not a huge pasta lover but I do enjoy a good pasta recipe every now and then. And this combination is delicious.

Ingredients

  • 1 onion, chopped

  • 80 g goat cheese

  • 40 g sun-dried tomato

  • 200 g linguine

  • 1 tablespoon olive oil

  • Fresh oregano

Directions

  • Heat a medium saucepan over medium heat. Sauté the onion in olive oil for 8 minutes, until golden.
  • Cut the goat cheese into squares and add to the pan. Chop the sun-dried tomatoes and add to the pan. Reduce the heat and cook for 2-3 minutes.
  • Cook the pasta al dente in salted boiling water. Drain pasta when cooked.
  • Combine the pasta and the sauce in the saucepan and serve. Add some fresh oregano leave and some freshly grated parmesan cheese if desired.
