Easy crepe batter that you can use to make delicious homemade savoury or sweet crepes.
If you never done crepes before this is for sure the easiest crepe batter to make at home.
Savoury or sweet fillings?
You can use this batter to make sweet or savoury crepes, so let me inspire you with some ideas:
Savoury crepes:
- Cheese, ham and fresh spinach
- Cheese and ham
- Pan roasted mushrooms and spinach
- Mozzarela and fresh tomato (and basil)
- Roasted aubergine, mozzarela, tomato sauce and oregano
- Camembert and caramelized onion
- Pear, blue cheese and caramelized onion
- Asparagus and brie cheese
- Shrimps and spinach
- Hummus and fresh tomato
Sweet crepes:
- Nutella
- Pan caramelized banana and chocolate
- Sugar and lemon juice
- Honey, peanut butter and sliced banana
- Homemade jam

How to make easy crepe batter

minutesThe batter need to rest on the fridge for 1 hour or overnight.
With this recipe you will make 8 medium-large crepes.
Ingredients
2 medium-size eggs
120 g all purpose flour
250 g milk
2 g salt
Directions
- Combine all the ingredients in a blender until smooth.
- Chill the batter in the fridge for at least 60 minutes and up to 1 day.
- Heat a non-stick or stainless steal pan to medium heat.
- When the pan is hot grease with a butter or oil.
- Pour the batter (1/4 cup) in the center of the pan and tilt it to spread it all over the surface.
- Cook for 20-30 seconds and flip the crepe.
- Add you favourite filling, I added cheese, turkey and fresh spinach (finely chopped).
- Cook for another 20 seconds and fold the crepe.
- Transfer to a platter and cook the rest of the crepes. You should make 8 crepes.
- Enjoy!
