Fried zucchini flowers with curry and lime yogurt, fresh and aromatic.
It is zucchini flower season so instead of making the traditional stuffed zucchini blossom fritters from Italy why don’t we add some Asian spices?
Instead of making a plain batter, why don’t we add curry, fresh ginger, garlic…? If you make some lime yogurt as well, the result is just delicious.

Fried zucchini flowers with curry and lime yogurt

8 zucchini flowers/blossoms
1/3 cup flour
1 cup sparkling water
1 teaspoon curry powder
1 teaspoon grated fresh ginger
1 small garlic clove, grated
1/2 lime zest
salt
- Lime yogurt
3 tablespoon yogurt
1/2 lime zest
1/2 lime juice
salt
pepper
Directions
- Remove the pistil of the flowers, then rinse gently and pat dry on a paper towel.
- Batter:
- Place 6-7 ice cubes and 1 cup of water in a large bowl.
- Place a smaller bowl inside so the batter will be cold all the time.
- In the smaller bowl whisk together the flour, sparkling water, ginger, garlic, lime zest, curry powder and salt. Whisk the batter until it is smooth.
- Preheat oil in a frying pan.
- Dip the flowers into the batter, one by one holding them from the stem.
- Add to the hot oil.
- Fry for 1 minute on each side until golden and crispy.
- Remove and place on a paper towel-lined plate.
- Lime yogurt
- Mix all the ingredients in a small bowl.
- Serve the fried zucchini flowers with the lime yogurt. Enjoy!
