Shrimp salad
We are going to make a delicious shrimp salad with homemade healthy mayonnaise. You can use tuna instead of shrimps, both options are great options.
You can use this salad to make some stuffed piquillo pepper, to use it on a sandwich, or as an appetizer for a bbq with friends. As we will use the healthy mayo is it lighter than any other salad and as delicious.

White asparagus with shrimp salad

4 white asparagus
- Shrimp salad
3-4 tablespoon healthy mayonnaise
2 teaspoon chopped green onions
6-7 cooked shrimp, chopped
Directions
- Clean and cook the asparagus following these steps. Allow to cool.
- Shrimp salad
- In a small bowl combine all the ingredients.
- Assembly
- Take a sharp knife and open each asparagus lengthwise. Do not cut them fully, they need to look like a canoe.
- Place the asparagus on a platter and stuff with the shrimp salad.
- Drizzle with olive oil and serve.
