Last week I got a little bit of homemade smoked salmon from a friend of mine. Homemade with fresh salmon she got at my favourite fish store in The Hague. After trying some classic toast with cream cheese I wanted to make something different.
I thought it would be a nice idea to make some mini tacos for lunch with some mango, avocado, tomato, cottage cheese and lime. Sometimes you mix some simple ingredients and you get a delicious result.
They are easy to make, fresh and are ready to go in less than 20 minutes.

Salmon Tacos with Mango – quick lunch

Ingredients
Smoked salmon fillets
1/2 mango, cut into cubes
1/4 red onion, thinly sliced
1/2 lime juice
Cottage cheese, 6 teaspoons
1/2 tomato, cut into cubes
1/2 avocado, cut into cubes
1 teaspoon olive oil
salt and pepper
6 small tortillas
Directions
- Place the avocado cubes in a small bowl. Add olive oil, lime juice, salt and pepper. Mix and set aside.
- Heat the tortillas in a pan.
- Spread 1 teaspoon of cottage cheese over each tortilla.
Add some avocado, tomato, mango and red onion.
Place 1 salmon slice on the top. Serve and enjoy!
