Korean fried chicken bao

Ingredients

  • 350 g chicken thighs

  • 8 bao buns – recipe here

  • Marinade
  • 200 ml milk

  • 1 tablespoon lemon juice or vinegar

  • 1 teaspoon garlic powder

  • 1 teaspoon ginger powder

  • Salt

  • ½ teaspoon ground black pepper

  • Coating
  • ⅔ cup of plain flour

  • 1 teaspoon garlic powder

  • 1 teaspoon ginger powder

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • Korean sticky sauce
  • 1-2 tablespoon gochujang paste

  • 1 tablespoon honey

  • 1 tablespoon brown sugar

  • 2 tablespoon soy sauce

  • 1 tablespoon tomato paste

  • 1 tablespoon sesame oil

  • 1 tablespoon apple vinegar

  • 2 garlic cloves, minced

  • 1 tablespoon minced ginger

Directions

  • Chop the chicken into bite-size pieces.
  • Place the chicken in a container or bowl. Add the marinade ingredients, cover and place in the fridge to marinade for 1 hour or overnight.
  • Sauce:
  • Place all the ingredients in a saucepan and stir together.
  • Bring to a boil and simmer for 1 minute until thickened. Set aside.
  • Fried chicken:
  • Mix together the coating ingredients in a bowl or shallow plate.
  • Heat 2-3 cups of oil in a saucepan.
  • Lift the chicken from the buttermilk to allow the excess to drip off.
  • Dredge the chicken in the coating mixture and when the oil is hot enough, add in 4-5 pieces at a time.
  • Cook for 4-5 minutes until golden and crispy. Transfer to a platter and fry the rest of the chicken.
  • Heat the sauce until warm and pour over the crispy chicken. Carefully toss together.
  • Assembly: Open the bao bun and stuff with the Korean chicken. Add: sliced red onion, sliced green onions, cucumber, fresh coriander, sesame seeds and a slice of peach.
