Cabbage rolls – Korean style

Cabbage rolls are a classic autumn recipe, but these are Korean style cabbage rolls, a must!

I got inspired by a similar dish in South Korea, and I thought it was so flavourful and perfect to enjoy winter cabbage.

Filled with vegetables, rice and ground chicken. Perfect for a family dinner. If you are looking for a different recipe to enjoy cabbage, look no more.

Can I make them vegetarian?

We will use minced chicken meat for the filling but if you want to make it 100% vegetarian, you can use firm tofu. The filling in absolutely delicious both ways.

What type of cabbage can I use to make cabbage rolls?

Savoy cabbage is the classic one to make cabbage rolls as it has almost no hard stem. Can I use napa cabbage (kimchi cabbage)? Of course, actually it is my favourite as the stem part gets so soft and holds the filling perfectly.

Ingredients

  • 1 napa or savoy cabbage (9 leaves)

  • 250 g ground chicken (or ground pork)

  • 220 g cooked rice

  • 1 carrot, grated

  • 1/2 onion, finely chopped

  • 1 garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 1 egg

  • 2 tablespoons soy sauce

  • 1 teaspoon ground bean sauce or oyster sauce

  • 1/2 teaspoon gochujang paste

  • 1/4 teaspoon ground black pepper

Directions

  • Bring a large pot with water to a simmer.
  • Separate 9 cabbage leaves and cook in simmering water for 8 minutes for the napa cabbage and 3 minutes for savoy cabbage leaves.
  • Rinse the cabbage leaves in cold water and remove the excess water with a clean kitchen towel or kitchen paper.
  • Filling:
  • Combine all the ingredients in a large bowl.
  • Place a cabbage leave on a cutting board and add 2 tablespoons of the filling almost on the edge of the stem.
  • Make a first roll, like when making a burrito. Bring the sides together and keep rolling.
  • Repeat until you make 8-9 cabbage rolls.
  • Heat 1 tablespoon of neutral oil on a casserole, over medium heat.
  • Place the cabbage rolls forming a circle.
  • Add 1/2 cup of water, cover with the lid and cook for 20 minutes.
  • Enjoy!
