Ingredients

  • 1 large can (400 g) white beans, drained and rinsed

  • 4 sun-dried tomatoes

  • 1 tomato

  • 1-2 carrots, peeled

  • 20 kalamata olives

  • 1/2 onion

  • Canned tuna or bonito

  • Shaved parmesan

  • Fresh and dry oregano

  • Olive oil

  • Salt and pepper

  • Apple vinegar

Directions

  • Place the white beans in a salad bowl.
  • Chop the onion, carrot, tomato and sun-dried tomatoes and add them to the bowl.
  • Add tuna and kalamata olives and toss.
  • Drizzle with olive oil, sprinkle some dry oregano, salt and pepper, toss.
  • Serve with some shaved parmesan on top.
