Easy fish meatballs with tomato sauce. A fun way to enjoy fish.
Cod meatballs are one of my favourite ways to prepare fish for those that are not really into fish dishes. It is easy to make, it has lots of vegetables and goes amazing with the almond and tomato sauce.
Fish meatballs with tomato sauce

350 g cod fillets
70 g zucchini
75 g leek
1/2 apple
1 egg
1 teaspoon parsley, chopped
1 tablespoon breadcrumbs
Salt
Pepper
- Tomato sauce
400 g canned tomato
25 g almonds
1 teaspoon garlic powder
Topping: parsley
Directions
- Heat a medium-size pan over medium heat.
- Chop the zucchini, leek and apple and cook with a little bit of oil and salt over medium heat until soft, about 10 mins. (you can use a vegetable chopper).
- Finely chop the clean cod fillets. You can use the vegetable chopper. Transfer to a bowl.
- Add the rest of the ingredients: sautéed vegetables, parsley, egg, breadcrumbs, salt and pepper.
- Mix well with a spoon or with clean hands.
- Shape the mixture into even size meatballs ( I made 15 balls).
- Roll meatballs over some flour and sear them in a low casserole over medium heat.
- In the meantime, place all the sauce ingredients on a blender and blend until smooth.
- When the fish meatballs are golden, pour the tomato sauce over and 1/2 cup water.
- Simmer for 20 minutes.
- Sprinkle with some fresh parsley and enjoy!
